Ingredients (Serves 2-3)

  • 2 salmon fillets (6 oz each)
  • 2 tbsp extra virgin olive oil
  • 2 cloves garlic, minced
  • Juice of 1 lemon
  • 1 tsp lemon zest
  • 1 tsp honey (optional for a slight sweetness)
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/2 tsp paprika
  • Salt & pepper to taste
  • Fresh parsley or dill for garnish
  • Lemon wedges for serving

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Prepare the marinade: In a small bowl, mix olive oil, garlic, lemon juice, lemon zest, honey, oregano, thyme, paprika, salt, and pepper.
  3. Marinate the salmon: Place the salmon fillets on the baking sheet and brush the marinade evenly over the top. Let sit for 5-10 minutes.
  4. Bake: Roast in the oven for 12-15 minutes until the salmon is flaky and opaque. (Optional: Broil for 1-2 minutes at the end for a crispy top.)
  5. Garnish & serve: Sprinkle with fresh parsley or dill and serve with lemon wedges. Pair with roasted vegetables or quinoa for a balanced meal!
